Cornish Kern is a long-maturing hard cheese encased in a breathable waxy rind. It is made in handsome 4kg wheels. Originally derived from a Gouda style cheese and further developed with alpine style cultures, it shares the characteristics of both Dutch and Alpine cheeses. Black on the outside and a golden curd within, Kern is close textured, matures over 16 months for a deep and rounded buttery and caramel taste.
