Halloumi is a Cypriot, firm, brined and slightly springy cheese.
Traditionally made from a blend of goat, sheep and cow's milk, with a strong and salty flavour.
Due to its high melting point, halloumi is ideal for frying and grilling; the cheese holds its shape and turns cripsy on the outside and moreishly soft on the inside.
